As someone who earned the nickname Cheddar in elementary school, I absolutely loved this. The movie pairings were perfect, and that Taleggio description—“delightfully tubby, with yeasty aromas of baking bread followed by earthy mushrooms and a delicate perfume of that signature washed-rind funk”—pure poetry.

This is one of my most favorite cheeses, especially if you can find the raw! It’s divine melted, but almost too good to cook it!
