This is one of my most favorite cheeses, especially if you can find the raw! It’s divine melted, but almost too good to cook it!

I love it at room temp with Granny Smith apples or on a warm baguette , or ahem, with a spoon.
Ohh i like this. Granny smith, baguette, and maybe a little whole grain mustard, and also buckwheat honey is where my mind is going.
